Tzatziki




INGREDIENTS

½ large cucumber
200 ml fat-free natural yoghurt
1 clove of garlic, peeled, squashed
1 heaped teaspoon dried mint
OR
1 heaped teaspoon dried oregano
1 handful of fresh dill
salt, pepper

METHOD

Grate the cucumber into a bowl. Add some sea salt, and then use your hands to squeeze out as much water as you can. Pour the water away, then put the cucumber into the empty bowl and add the yoghurt. Add the garlic and the fresh or dried herb(s) and mix really well. Taste it to make sure you’ve got the balance right, and season it to taste.
