Catalan salad




INGREDIENTS (for 2 persons)

40 g pine nuts
2 handfuls of  mixed green salad
4 clementines
4 sprigs of fresh mint
100 g Manchego cheese or goat cheese

Dressing:
2 tablespoons sherry vinegar
2 tablespoons extra virgin olive oil
1 teaspoon runny honey

OR
creamy balsamic vinegar
and some olive oil

METHOD:

1. Toast the pine nuts in the frying pan for a few minutes, tossing often. 
2. Put the salad on the plates devived equally.
3. Peel and finely slice the clementines, place the slices on top of the salad leaves, and then pick over the mint leaves.
4. Shave over the Manchego/goat cheese and scatter with the hot nuts.
5. In a cup, make your dressing with vinegar, extra virgin olive oil and honey, then season to taste and pour over your salad. If you don’t have time to make such a big fuss, use creamy balsamic vinegar instead.
Serve your salad with warm pitas. Enjoy!
