Jeroen's Zucchini Soup
INGREDIENTS (Serves 4)
1 Onion
2 Zucchinis
olive oil
a couple of sage leaves
1 litre chicken stock
125 ml fresh cream (slagroom)
100 g smoked salmon (zalmsnippers) or crunchy baked bacon
METHOD:
1. Finely chop the onion and sage and cut the courgette into little blocks.
2. Heat the oil in a large pan and fry the onion and sage for a couple of minutes. Add the courgette and fry for approximately 3 more minutes on high heat while stirring.
3. Pour the chicken stock in and let it gently cook for about 10 minutes.
4. Puree the soup and mix in the cream, add salt, pepper and a pinch of smoked pepper powder.
5. Add the salmon or bacon after serving the soup in a bowl or on a plate.
