One-cup pancakes with blueberries
INGREDIENTS for the dough:
1 large egg
1 cup of flour
1 cup of milk
1 pinch of salt
1 teaspoon baking powder
olive oil
200 g blueberries
Maple syrup for serving
METHOD
1. Whisk all the ingredients together until you have a lovely smooth batter, then fold through the blueberries.
2. Heat ½ a tablespoon of olive oil in a large non-stick frying pan over medium heat, carefully tilting the pan to spread the oil out evenly.
3. Add a few spoons of batter to the pan and spread the blueberries over it before the dough is cooked.
4. Cook for 1 to 2 minutes, or until little bubbles appear on the surface and the bases are golden, then carefully flip them over.
5. When the pancakes are golden on both sides, remove them to a plate.
Repeat with the remaining batter. Serve the pancakes while they’re still hot, with maple syrup and some extra fresh berries, if you like.
