Asparagus sandwich
INGREDIENTS
for the sandwiches/person:
1 slice of brown bread
1 slice of melting cheese
1 slice of ham
5-6 pieces of steamed/fried baby asparagus
bechamel sauce
for the bechamel sauce (for 6 persons)
60 g flour
60 g butter
750ml milk
1 egg
125 g sour cream
70 g grated cheese
salt, pepper, nutmeg
METHOD
1. Melt the butter in a saucepan, then add the plain flour. It is sure that you have to add some milk immediately and stir continuously until a light, smooth paste forms. Add the remaining milk gradually, stirring as you go, until you get a smooth sauce. Cook for 5-10 mins, stirring continuously until the sauce has thickened.
2. Remove from the heat and add the cheese, stir until it melts completely. Then add the sour cream and the egg. Season to taste and set aside.
3. Fry the ham slices in a pan and set them aside too.
4. Heat the grill, and toast the bread slices.
5. Layer the bread with the sauce, the asparagus, some sauce again and the grated cheese.
6. Put the sandwiches into the oven/grill until the cheese is melted and gets a golden-brown colour.
