Mussels with garlic and wine





(SERVES 2)

Ingredients
40g butter
2 tablespoon olive oil
2 cloves of garlic pressed/minced
1 shallot finely chopped
1,5 kg mussels
200 ml white wine
2 bay leaves
1 bunch of fresh flat-leaf parsley
50 ml double cream

Method
1. In a pan, melt the butter with olive oil.
2. Add the shallot and the garlic and sweat them for a couple of minutes. Don’t let it get brown!
3. Add the wine, the cream, the bay leaves, and a pinch of sea salt and black pepper.
4. Make it boil and cook it for 5 minutes. Next, add the mussels (if any are open, give them a tap; if they don’t close, throw them away). Cover and steam them on high/middle heat for 6 minutes, or until the mussels have opened (discard any unopened ones).
Add the parsley, cover the pan and shake it together. Serve with bread or French fries.
