Maroccan mussels




(SERVES 2)

Ingredients
2 cloves of garlic pressed/minced
1 teaspoon Harissa (heaped)
1 tin of tomatoes (400g)
1 bunch of coriander
1 pinch saffron
1,5 kg mussels
1 small preserved lemon chopped (optional)


Method
1. Pour the oil into a pan and add the garlic and the harissa. 
2. Put the tomatoes, half a bunch of coriander, the preserved lemon, the saffron and one pinch of salt into the mixer and combine it.
3. Add the mixture to the garlic into the pan and increase the heat.
4. Cook it for a couple of minutes. Next, add the mussels (if any are open, give them a tap; if they don’t close, throw them away). Cover and steam them on high/middle heat for 6 minutes, or until the mussels have opened (discard any unopened ones).
Add the rest of the fresh coriander, cover the pan and shake it together. Serve with toasted bread or French fries.
