Honey-Mustard Drumsticks
INGREDIENTS:
5 red onions
2 cloves of garlic - peeled, crushed
1 tablespoon dried tarragon
(+ some fresh tarragon for decoration if you like)
5 tablespoons olive oil
1 kg of peeled small potatoes
1 kg chicken drumstick
3 tablespoons liquid honey
3 tablespoons mild mustard (2 normal+1 with seeds if you like)
METHOD:
1. Preheat the oven to 200°C
2. Crush the dried tarragon with 1 teaspoon salt in a mortar.
3. In a large bowl, mix the salty tarragon, honey, mustard and garlic. Season the drumsticks with salt and pepper, then cover them equally with a thin layer of honey-mustard sauce. (put some under the skins too)
4. Peel the onions and cut them into quarters.
5. Put the potatoes and onions into a baking tray, sprinkle them with oil and mix well. Season with freshly ground salt and pepper. Place the drumsticks on the top.
6. Bake the potatoes and chicken in the middle of the oven for about 45-60 minutes until dark golden. (Sometimes take a look at it and roll the drumsticks over to get the skin crispy on each side)
